WIAW in Jackson Hole, WY!

So, I know I posted already about my amazing trip to Jackson Hole, but I intentionally left out most of what I ate there/what restaurants Nathan and I went to because I wanted to save it for…

JENN’S WEEKLY PARTY!!!

And lets be honest, it totally deserves its own post. So lets get to it shall we?

I already went over this a little on Monday, but Snake River Brewing Co. is phenomenal. Their Pakos IPA is by far my favorite. Quite possibly the best IPA I’ve ever had!

Saturday morning we stopped in to Cafe Genevieve to refuel after our morning hike, and to get properly caffeinated.

I had the most amazing frittata with peppers, feta cheese, and kale, and a cup (or 3…or 4…who’s counting?) of locally roasted coffee.

Dinner was at the Mangy Moose Saturday night. We were starving after playing in the Tetons and Yellowstone all day, so a burger sounded like exactly what I needed.

Unfortunately, I can’t find the picture, so you can just look at how pretty the Tetons are instead.

But I had mine California-style with avocado, swiss cheese, and sprouts, and no bun. I did some serious work on an order of onion rings too.

Breakfast the next morning was another amazing local cafe.

Both Shades Cafe and Cafe Genevieve I could have eaten at for breakfast, lunch, and dinner. I had so much trouble deciding!

After getting distracted by the pastry case, I settled on Muesli with greek yogurt, and local fruit and honey.

On the drive home, my options for food were limited, so I had a subway salad in the car, then fueled up for the Brittney Spears class with some hummus and carrots.

All in all not a bad weekend of eats! At the risk of sounding incredibly cheesey, and I mean more corny than I may have ever sounded before on the blog, I’ll just go ahead and say that what really nourished me most about the weekend was the fresh air, the beauty of the place I was surrounded by, and time spent with one of my closest friends.

I’m still keeping up with Meg’s October Breakfast Challenge too! I made an amazing sweet potato hash on Monday…

…and Tuesday experimented with pumpkin berry chia pudding! I loosely followed this recipe from Steph, the chia pudding queen! I didn’t have fresh ginger or gogi berries, so I left out the ginger, subbed in some PB2, and used frozen berry mix.

I did take her (and Meg’s) recommendation to top it with coconut butter, and I was very impressed! It looked nasty, but was very yummy! Plus I’m loving what chia pudding is doing for my tummy in the morning! Nothing else seems to make it feel quite so good.
